Our 300 olive trees are of three different types all original from Tuscany: "Moraiolo", "Frantoio" and "Leccino".
The olive harvest takes place in the end of October, the excellent time of the year for producing olive oil, exclusively by hand with the use of nets and shakers.
Milling with the traditional whole olive pressing method takes place within 24-48 hours in a high tech grinder to guarantee genuine extra virgin oil, combining modern working methods with the highest level of hygiene and tradition.
These technologies allow cold pressing, which helps to keep the noted nutritional characteristics of Extra Virgin Olive Oil at their most pure state.
